Mixed Vegetable Soup
This delectable soup introduces your baby to more vegetables, with varied textures, colours and flavours. Cauliflower, bottle gourd, carrot and tomatoes come together to create a partly sweet and partly tangy soup that your child is sure to enjoy. This soup also happens to be a true multi-vitamin delicacy, rich in vitamins A and C, and folic acid too. If your child does not like the flavour or texture of tomatoes, you can avoid it to make the soup milder.
- Combine the cauliflower, bottle gourd, carrot and tomatoes with 1 cup of water in a pressure cooker, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Cool slightly and blend in a mixer till smooth.
- Transfer the mixture into a deep non-stick pan and cook on a medium flame for 1 minute.
- Serve lukewarm.
