Onion Sambhar(tiny purple shallots), A signature dish in every tamilians menu. .Good fresh onions are the key to this dish. This sambhar can accommadate most combination of vegtables so dont be afraid to experiment. Try to keep the vegtables bite sized in this sambhar to ensure they are thorouglhly cooked inside.
Small Onion peeled – 20 pieces
Or 2 Big Onion diced into big pieces
Tomato – 1medium pieces ( options)
Tamarind – Lemon Sized
Soak in the hot water and take extract
Cooked thuar dhal – 1 cup
Sambhar powder – 2 tsps
Salt as required
Sunflower or any cooking oil – 2tsps
Mustard seeds – ¼ tsp
Fenugreek – ½ tsp
Asafoetida – ½ tsp
In frying pan, add oil fry the above seasoning and than add the Onions. Fry onions in oil till transparent and also add Tomato.
Add the tamarind extract and cook till it becomes soft.
Add sambhar powder, salt and cook the smell goes off and now add mashed thuar dhal and cook till it becomes thick.
Garnish with chopped coriander and curry leaves.
Note: In the above Onion Sambhar, you can replace Onion with vegetables like Oakra/Ladies finger, Brinjal, Chowchow, Drumsticks, Radish, White pumpkin, Yellow pumpkin.
